The Carillon is the newest fine dining restaurant in Austin. Housed in the AT&T Executive Education And Conference Center on UT’s campus, the kitchen is run by Chef Josh Watkins, formerly of Driskell Grill. Having enjoyed the Driskell Grill before, I had high hopes. The menu lived up to up to my expectations as I enjoyed White Bean Soup, Crisp Pork Belly, Braised Beef Short Ribs, Fried Eggplant Caprese, and Steak Tartare. And by enjoying, I mean I had at least three of each. Oh lord, I do this to myself every time (food coma)! FYI: Dinner is open to the public but lunch is reserved for faculty and staff of the University of Texas.

So great to see this. I’m really excited about eating here during Austin Restaurant Week, because I looove the Driskill. Did you manage any dessert there??
